Once again, a very limited quantity of the "Double Cellars" edition from the Mars Shinshu distillery is available. This expression underwent a unique maturation process, starting in the Shinshu aging cellar, where it was matured in American White oak and Sherry casks. Subsequently, it was transferred to the company's maturation facilities on the small island of Yakushima, where it continued to age in Bourbon barrels. Situated to the south of mainland Japan, Yakushima offers a warmer climate for aging. Bottled in 2019, the resulting malt boasts a profile characterized by aromas and flavors of apricot, plum, and bitter chocolate. It exhibits well-balanced acidity, alongside notes of mixed spice and a delicate hint of saltiness.

Yes

Nose: 

Honey, dried pears, apricot jam,  dark chocolate. Shows a level of maturity that belies the young age.

Palate: 

Some nice spiciness mostly nutmeg, salt and pepper. Cocoa, vanilla, almond flakes, butter, lemon meringue, plums, coconut water. Adding a little water brings out tangy orange and peanut butter.

Finish: 

Nutmeg, almond flakes, lingering cashew nuts and with water the peanut butter.

Having aromas and flavours bitter chocolate, plum, and apricot with good acidity as well as mixed spice and a subtle saltiness.
