Utilizing wine barrels that were previously employed by some of Israel's premier wineries, this distillery leverages the Mediterranean climate, diverse soil compositions, and the stark contrast between hot days and cool nights. These factors combine to impart a distinct and spicy character to Israeli wines. Once these casks have been emptied, they are filled with new make spirit, allowing for maturation that encapsulates the local terroir. The result is a floral single malt whisky adorned with dark chocolate undertones.
In the creation of this small batch, single malt whisky, ex-Bourbon casks play a vital role in its initial aging. However, the uniqueness emerges during the six-month finishing period, where the whisky undergoes maturation in fortified-style pomegranate wine casks. This creative use of pomegranate wine casks adds a layer of exceptional flavor to the whisky, uniquely influenced by the pomegranate fruit. This innovation ultimately contributes to the whisky's remarkable and distinctive profile, embodying a harmonious blend of local influences and creative maturation techniques.
